After our brief detour into chocolate-lacking caramels, we return to the delicious world of Green and Black’s chocolate; this time we’re looking at their quietly elegant Hazelnut and Currant bar.

Based in London near Waterloo, Green & Black’s is now owned by Cadbury Schweppes. They operate as a stand alone business with founder Craig Sams remaining as Chairman. Cadbury Schweppes are now able to enhance the brand’s success by further adding their in depth knowledge of cocoa production to ensure the continued supply of quality, organic cocoa.

Green & Black’s Hazelnut & Currant bar has a minimum cocoa content of 60% and contains organic hazelnuts and currants. Green & Black’s is known for selecting only the finest organic ingredients and taking extra time and care to bring out the intense flavor that has become their trademark.

While these don’t technically contain chocolate – oh OK, they have no chocolate whatsoever – they’re too good to pass up!

Salted Butter Caramels by France Delights come neatly packaged in a wood Camembert box.

The succulent individually wrapped caramels come from the South of Brittany and are made with wheat glucose syrup, sugar, fresh salted butter (9.1%), powdered skim milk, and of course, “fleur de sel Guerande” (1%). Fleur de sel is rich in minerals and lower in sodium than regular salt, providing an exquisite final touch to this mouthwatering marriage of flavors.

Easy & Delicious Chocolate Cake with Fudge Frosting

This cake is very nice in a rectangle pan, but is truly spectacular baked in rounds and richly frosted. Simple to make, moist, and delicious.

Cake

  • 2 cups Flour
  • 2 cups White Sugar
  • 1/2 cup Shortening
  • 3/4 cup Water
  • 3/4 cup Buttermilk
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 teaspoon Vanilla
  • 1/2 teaspoon Baking powder
  • 2 Eggs
  • 4 oz Unsweetened chocolate, melted and cooled
  • Fudge frosting (see below)

Preheat oven to 350 degrees fahrenheit.

Grease and flour 13 x 9 x 3 pan, or 3 8″ round pans, or 2 9″ round pans.

Toss everything except the frosting ingredients into a large bowl and beat on low speed for 30 seconds, scraping bowl constantly. Once everything is combined, beat on high speed for 3 minutes, scraping bowl constantly. Pour into pan(s).

Bake for 40-45 minutes (rectangle pan) or 30-35 minutes (round pans), or until a toothpick comes out clean.

If you chose to make rounds, allow them to cool for 10 minutes, then remove from pans.

Cool completely, and frost.

Fudge Frosting

  • 2 cups sugar
  • 1/2 cups shortening
  • 3 oz unsweetened chocolate
  • 2/3 cup milk
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla

Mix all ingredients except vanilla in a 2 1/2 quart saucepan.

Heat to a rolling boil, stirring occasionally. Boil 1 minute without stirring.

Place saucepan in a bowl of ice and water. Beat until frosting is smooth and spreadable; then add vanilla.

Nearly three generations of Europeans have grown up eating Nutella, which was created in the 1940’s by Pietro Ferrero, a pastry maker and founder of the Ferrero company.

At the time, cocoa was in short supply due to war rationing, and chocolate was a delicacy limited to a lucky few. So Pietro Ferrero mixed cocoa with toasted hazelnuts, cocoa butter and vegetable oils to create an economical spread of chocolate which he called “pasta gianduja” (pronounced: pasta jon-du-ja). Pasta gianduja’s success was unprecedented.

In 1949, Ferrero made a “supercrema gianduja” which was spreadable as well as inexpensive. This product became so popular that Italian food stores started a service called “The Smearing”. Children could go to their local food store with a slice of bread for a “smear” of “supercrema gianduja”. In 1964 supercrema gianduja was renamed “Nutella” (its origin being the word “nut”), and began to be marketed outside Italy!

Today, Nutella is the number one spread in Europe (In Germany Nutella is a favorite breakfast spread, and in both Italy and France Nutella is a popular afterschool snack). Worldwide, it outsells all peanut butter brands combined.

You simply spread it on Italian bread, toast or croissants. You can use Nutella atop apple slices or pretzels. Substitute Nutella in recipes calling for peanut butter and you will wonder why you hadn’t discovered it before.

Nutella “Dog” Recipe

Spread the cut sides of a hot dog bun with Nutella. Cut a banana in half, length-wise, and sandwich with half the banana in the bun.
